When you get fresh tomatoes and mozzarella at the farmers market, you know it’s time for caprese salad. I love caprese salad and can eat it for breakfast, lunch, or dinner. I alone can go thru a whole platter and still can’t get enough of it.
This salad is a simple yet an elegant looking salad to serve at any party. Fresh tomatoes, creamy mozzarella drizzled with the sweet tartness of balsamic reduction and a sprinkle of salt and pepper is sure to make you sink your mouth into it.
3-5 Round Tomatoes cut thick
1 16 oz Mozzarella cheese cut thick
Fresh basil leaves
Salt to taste
1/2 tsp pepper
1 cup of balsamic vinegar
1 To make a balsamic reduction. Cook the balsamic vinegar down for 10-15 mins till it thickens . Cool it completely.
2 Arrange the tomatoes and mozzarella cheese alternately in a platter .
3 Sprinkle salt and pepper and
4 Drizzle the balsamic vinegar
5 Garnish with chopped basil and fresh basil leaves
