Fresh Strawberry Oatmeal Bars

Fresh fruit bars have a very different taste than preserves. You can control the sugar and make it with any fruit of your choice.

These strawberry oat bars have a soft chewy texture to them. My girls say it reminds them of the nutri-grain bars they once could eat. Fresh strawberries give it a real fruity taste.

Ingredients

1 cup Old fashioned rolled oats

¾ cup coconut flour

½ cup brown sugar

¼ tsp salt

2 tbsp. unsalted butter, melted

1 tbsp. lemon juice

1 tbsp. cornstarch

2 cups strawberries diced small

¼ cup honey

½ tsp vanilla extract

Directions

1 Mix the ¾ oats, coconut flour brown sugar, and salt in a bowl. Add melted butter and mix well.

2 Line a greased parchment paper and add ¾ of oat mixture and press down firmly.

3 In a  bowl add the strawberries, cornstarch, sugar, vanilla extract and sugar. Mix and spread over the oatmeal crust.

4 Cover with the remaining oat mix. Bake in a 350F preheated oven for 35-40 mins.

5 Let it cool completely and cut into squares.
