Happy St Patty’s Day!! Fresh Spinach and corn adds a sweet flavor and heartiness to rice. Spinach is a superstar of all greens, it is packed with high levels of iron and rich in calcium. It has vitamins and minerals that other foods don’t have. Spinach has a remarkable quality of increasing blood, restoring energy. (Remember the Popeye movies!! Every time he opened a can of spinach he got the energy instantly to fight) Spinach also helps with bone health.
Corn is added to remove the slight bitterness that the spinach adds to the rice. Corn is a source of high fiber and it supports the growth of friendly bacteria in our large intestines.
This recipe is simple and satisfying, it tastes even better with a bowl of plain yogurt. The color that it gives the rice is very pleasing and soothing to the eye.
1 cups of rice soaked for 30 mins
1 cup of fresh spinach washed and pureed
1 cup water
1/2 cup frozen or fresh-cut corn
salt to taste
2 bay leaves
2 tbsp of coconut oil
1 Wash and soak the rice for 30 mins . Heat oil in a pot and add the bay leaves, fry for about a minute. Add rice and fry for 3 mins.
2 Add in the spinach puree, water and salt and bring it to a boil and cook uncovered till the water level is reduced to the level of the rice and then cover and simmer for 20 mins .
3 Fluff with a fork. Enjoy with Okra and Potato stir-fry.
