Blueberry Galette- It’s my favorite summertime dessert next to sorbet. Oddly enough, I’ve never made a blueberry galette until now. I normally make banana and strawberry galettes. It is incredibly simple yet rustic. The blueberries do all the work. It’s even better with hand-picked, fresh blueberries.
Very simple ingredients make up this elegant looking dessert. I love this because I can use a prepared pie crust and its quick to throw together. It is perfect for summer time picnics, potlucks, and cookouts.
1 Pie Dough Crust thawed outside for 30 mins
2 pint blueberries
½ cup sugar
1 tbsp. cornstarch
Zest of lemon
1 pinch of salt
1 tsp of sugar for sprinkling
1 tbsp. of milk to brush the sides
1 Pre heat the oven to 400 F.
2 In a bowl, gently toss the wet rinsed blueberries, sugar, cornstarch, salt, and lemon zest until well mixed. Set aside
3 Roll out the dough into a ¼ to 1/8 inch thick round. Transfer the dough onto the baking sheet and place the blueberry mixture in the middle of the dough, leaving 1 to 2 inches border around the edge.
5 Gently fold the edges of the dough over the blueberry mixture, creating pleated edges. Brush the pastry with some of the milk and sprinkle with sugar.
6 Bake until pastry is golden and the blueberries are bubbling, about 25-30 minutes. Remove pan from the oven and set it on a rack. Let it cool until it is just warm. Then slice into 6 equal slices.
