Has any one noticed or is it just me, the prices on avacados has skyrocketed recently? My family loves guacamole. My daughter chose guacamole over her favorite sour cream to spread on her burgers and she loved it .
Guacamole, a dip made from avocados, originated from Mexico. Avocados are actually a fruit. It is high in Vitamin K, C, folate, and healthy fats. Healthy for you and it tastes great even when eaten just as a fruit. I sprinkle mine with a dash of pink salt.
At our house it is the dip we all cannot resist but to dig into once it is made, and it is so simple that my kids enjoy making it. Their favorite part is taking the seed out from the avocados.When making this dip for the kids I would add some boiled chicken or ham slices and sometimes we use this dip in our omelets on the weekends or make a nice wrap with sprouts, sun dried tomatoes, and red onions.
Once you get good ripe avocados, and you are ready to serve, add the chopped cilantro, chilies, onion, and then add salt and lemon juice. And Whola! You have the Perfect Guacamole!!
This recipe has a mild flavor with the freshness of the lemon juice and slight kick of the jalapeños. Not too spicy for kids and a great recipe for the first time taster.
3 medium ripe avocados
1/4 cup finely chopped red onion
1/2 jalapeño pepper, minced (more or less, to taste)
1/4 cup chopped cilantro leaves and upper stems
Pinch or two of pink salt
Juice of one lime
1 Cut the avocados in half and remove the pit. Spoon the flesh of the avocados into a molcajete, mortar and pestle, or mixing bowl.
2 Add the onion, jalapeño, cilantro, and pink salt, and gently toss all the ingredients . Add the lime juice and stir gently, so as not to crush the ingredients too aggressively.
