Brown Sugar Cinnamon Coffee Cake

On a wintry Sunday morning what better than to enjoy your morning coffee with a warm moist cinnamony coffee cake. This recipe calls for heaping spoons of cinnamon. Most receipes call for sour cream , but to make it healthier I add Greek yogurt. The difference between sour cream and Greek yogurt is that I make mine without eggs and so the Greek yogurt keeps it moist for couple of days, while with the sour cream the cake looks dry by evening.

Cinnamon is a warming spice that instantly gives your body warmth. It is excellent to have during cold winters. It also has medicinal benefits. It has a high source of antioxidants, contains anti inflammatory properties, benefits skin, helps to fight with allergies and many more.


21/2 cups Pancake mix ( I used Bisquick)

1/2 cup brown sugar

11/2 tbsp heaping cinnamon powder

Pinch of salt

3/4 cup Greek yogurt

1 tsp vanilla extract

1/2 cup water


2 tbsp brown sugar

1tbsp heaping cinnamon


1 Pre heat oven to 350F . In a bowl mix the dry ingredients and keep aside.

2 In a separate bowl mix the wet ingredients. Fold the dry  ingredients into the wet ingredients.

3 Mix well and and pour the batter into a greased bund pan . Bake at 350F for 30 mins .

4 Remove from the oven. Turn it on to a serving plate once cooled.
