Gluten free Falafel

Falafel is a middle eastern food that is eaten with a pita bread, some lettuce, red onions and tomatoes and finally a drizzle of tzatziki sauce. I  prefer to just eat falafel plain, or maybe with a bit of tzatziki sauce or hummus on the side. Sometime I toss them in a green salad with a tzatziki dressing.

Garbanzo Beans aka chickpeas are highly consumed beans next to Kidney beans . Chickpeas are high in folate and low in cholesterol . Packed with protein they keep you full longer and the need to snack in between will slowly diminish.


2 cups of boiled chickpeas (reserve the liquid)

1/2 cup fresh cilantro leaves chopped

1/2 cup fresh parsley leaves

2 tsp of  dried lemon powder or juice

3 tsp cumin powder

1 tsp salt

1 tsp coriander powder

1 green chili chopped finely

1/2 tsp garlic finely chopped

2 tbsp. of corn starch

2 tbsp of  reserved chickpea liquid


1 Pre heat the oven at 400F .

2 in a food processor , combine all the above ingredients , except the water and corn starch . pulse to combine.

3 Add the chickpea liquid and the dough sticks together and does not crumble.

4 Scoop out and make small balls and place in on a greased parchment paper

5 Bake at 400F for 20 minutes ,turning the falafel after 10 minutes.

6 Serve hot , it will be crispy outside and soft inside
