Edmamae Cumcumber Radish Salad

Edamame has high protein content and less calories, which makes it an ideal snack for weight conscious people. Health benefits of edamame include healthy digestive system. It is a good source of fiber which facilitates digestion. They’re low in fat and calories and high in protein, fiber and almost every other essential vitamin and mineral. While soybeans have great health benefits, they also contain active ingredients similar to estrogen.

Soybeans are often served as a snack after being boiled for about five minutes and salted, but the cooked beans can be added to soups or salads, mashed or used in any recipe to replace peas.

Eating Edamame for lunch keeps the afternoon slump away, you don’t have to look around to find a snack.

Ingredients

2 cups boiled Edamame

1 cup chopped red radish

1 cup chopped cucumber

1 cup chopped tomatoes

1/2 chopped spring onions

1/2 cup chopped mint

1/2 cup chopped cilantro

Juice of 1 lemon

salt to taste

1/4 cup oil

1/4 cup vinegar

1 tsp of sugar

1tsp of garlic powder

lemon zest for garnish

 

Directions :

1 In a bowl add in edamame , cucumber ,tomatoes, radishes and spring onions

2 In small bowl , mix cilantro, mint, salt, pepper, lemon juice, vinegar, oil, garlic powder and sugar. Mix well till you can smell the mint aroma.

3 Pour the dressing over the salad and chill for 30 minutes.  Serve with lemon zest .
