Blueberry Mango Mint Salsa

Along with the summer heat nothing can be more refreshing than berries, mangos and tomatoes.  The farmers market is filled with freshly picked blueberries and the juiciest tomatoes. 

Last weekend, at the farmers market, I came across a fresh pint of plump blueberries. I just bought them not knowing what I was going to use them for. I was making a Mexican dinner for our dear friends and then it struck me, how about a blueberry mango mint salsa.

All you need is blueberries, mangos, tomatoes, red onions, cilantro, mint and  lemon juice. And Voila!! You have a very refreshing salsa to go with tortilla chips.

Ingredients 

1 cup blueberries

1 Mango  diced 

2 Tomatoes diced 

1 Onion diced

1/2 bunch cilantro leave minced 

8-10 mint leaves julienned 

1 lemon juiced 

1/2 tsp black salt 

1/2 tsp cumin powder 
Method 

1 In a bowl add all the ingredients except salt, lemon juice, and cumin powder. Mix well. 

2 Now add salt and cumin powder mix and pour lemon juice over it and mix well.

3 Refrigerate for 1 hour then serve with tortilla chips.
