Last weekend, at the farmers market, I came across a fresh pint of plump blueberries. I just bought them not knowing what I was going to use them for. I was making a Mexican dinner for our dear friends and then it struck me, how about a blueberry mango mint salsa.
All you need is blueberries, mangos, tomatoes, red onions, cilantro, mint and lemon juice. And Voila!! You have a very refreshing salsa to go with tortilla chips.
1 cup blueberries
1 Mango diced
2 Tomatoes diced
1 Onion diced
1/2 bunch cilantro leave minced
8-10 mint leaves julienned
1 lemon juiced
1/2 tsp black salt
1/2 tsp cumin powder
1 In a bowl add all the ingredients except salt, lemon juice, and cumin powder. Mix well.
2 Now add salt and cumin powder mix and pour lemon juice over it and mix well.
3 Refrigerate for 1 hour then serve with tortilla chips.
